You might see these at Asian Box (in Palo Alto) or any Taiwanese Restaurant serving Beef Noodle Soup. Chinese Tea Eggs might sound scary, but its actually just a nice brine with soy sauce/black tea. 
Time: 4 hours
Ingredients: 
  • 6 eggs
  • 1 liter of water
  • 3 tbsp of soy sauce
  • 1 tbsp of salt
  • 1 tbsp of sugar
  • 1 dried orange peel (found this at 99Ranch or any chinese supermarket)
  • 2 star anise
  • 1/2 ground cinnamon
  • 2 black tea bags
  • 1 tbsp of barley tea

Steps:
  1. place your eggs inside the pot with cold water, then wait for it to boil, once it is boiled immediately turn the stove off and keep the lid on for 10 minutes
  2. place the eggs under cold water
  3. then use the back of a spoon to crack the egg shells, this will help give a "marble" skin on the egg and allow some of the brine into the egg membrane
  4. using the same pot of water, add all the remaining ingredients and the eggs
  5. turn on the stove again and boil for 15 minutes
  6. remove just the tea bags and keep the lid on right after
  7. brine over night for for at least 3 hours

 
Taste like mash potatoes -minus the potatoes and butter! I am so excited to bring this to my Thanksgiving potluck.

Time: 45 minutes
Ingredients:
  • 1 avocado
  • 1 head of cauliflower
  • 12 cloves of garlic
  • 2 tbsp of salt
  • 2 tbsp of black pepper

Steps:
  1. boil the cauliflower for 5 minutes, boil the garlic cloves for about 1 minute
  2. drain the cauliflower and add half of the cauliflowers into the food processor (I just got the Ninja Master Prep Pro and it works pretty well.
  3. add in half of the avocado, 6 cloves of garlic, 1 tbsp of salt, 1 tbsp of black pepper
  4. spoon out the mixture and add some dill on top

Ingredients: 
  • 1 tbsp of salt
  • 2 tbsp of Olive oil
  • Eggplant strips
  • Dill
  • Dijon Mustard
  • Ketchup

  1. turn on the oven to 375 degrees 
  2. Cut up a whole eggplant intro strips (leave the skin on as there are great nasunin, which helps protect lipids in cell membranes) 
  3. place onto the baking sheet, add olive oil/salt
  4. bake for 7 minutes
  5. Done! add some dill and make a side of dijon mustard/ketchup dressing

Just when you are about done with work, now you have to attend a potluck. I only had 1 hour to cook/prep. My goal was to make an appetizer that had zero carbs, great nutrition, and bite size finger food. Here is what I created and picked up at Trader Joe’s.

Time: 30 minutes to make 20 of these bite size treats
Calories: 40 per serving (endive, mozzarella, tomato, guacamole, beets)

Ingredients: Trader Joe’s

  1. roma tomatoes
  2. beets ( taste like corn that is why I love it!) – great source of energy and Vitamin A,B,C
  3. mozzarella cheese
  4. endives
  5. black pepper
  6. guacamole
  7. wild arugula
There is no cooking needed. Simply slice the beets, tomatoes, and mozzarella into half cm layers. Then layer the endive with beets, tomato, mozzarella, guacamole, and arugala. Finish it off with a sprinkle of black pepper for some heat.
